Slow Cooker Orange Beef

Ingredients

2lbs stew meat
1 bottle Panda Express Orange Sauce
1 Green Pepper chopped.
1 small can of mandarin oranges drained
1 can water chestnuts drained

Directions
Place stew meat in the slow cooker and pour sauce over.

Cook on low 6 hours

One hour before serving add the water chestnuts and green pepper.

1/2 before serving, add the oranges.

Serve over rice.

Homemade Waffles

This morning I wanted to make something special for breakfast, as it was Father's Day and likely the last one I'll have with my dad.

I found an old NordicWare waffle iron awhile back in one of our cupboards and wanted to try it. Well, after I took a good look at our Belgian waffle iron, and decided that that little puppy needed to make its way to the trash.

So I searched the internet for recipes and found this one which I adapted just a little bit.


Ingredients: 1 3/4 cups flour
1 TBS baking powder
1 TBS sugar
1/2 tsp salt
3 large eggs
1 stick butter (melted)
1 1/2 cups milk
1 tsp vanilla
Directions
1. Place dry ingredients in a bowl and mix
2. In a separate bowl, place eggs and milk, wisk together until blended
3. Add melted butter and egg/milk mixture to the dry ingredients and mix with a wire wisk just until blended

Now for how to use stove top waffle iron

Heat the waffle iron about a minute or two on both sides. The temp gauge should say bake.
Spray with butter spray
pour about a ladle and a half of batter into the iron and close cook on one side for about 45 seconds and flip. I flip about 3-4 times until both sides are similarly golden. Then remove with a fork and top with your favorite toppings

I actually found using this iron to be easier than the electric variety, and much easier to clean.

Meaty Green Bean Crescent Pie

This is a great easy meal that will appeal to those of you that love green bean casserole.

Ingredients
1/2 c chopped onion
1/2 c shredded cheese
1 lb ground meat
1 can cream of mushroom soup
5 slices swiss cheese
1/2 can of Frenches onions
1 can green beans drained
1 egg beaten
1 can crescent rolls

Directions

Oven to 350
Place crescents in a lightly greased 10 inch pie pan. Press until you form a nice crust.
Add the cheese to the beaten egg and spread over the crescent crust.
In a skilled brown the ground meat with the onion.
Drain.
Add soup and beans and stir.
Spoon over the crust and top with cheese slices.
Bake 20 -25 minutes until crust is golden brown.
Top with Frenches Onions and bake another 2-5 minutes.

Let cool 10 minutes before serving for easier slicing.

Picante Omelet Pie

If you are looking for a quick easy dish for any meal of the day, this one is absolutely delicious!

Its 5 simple ingredients and when it comes out of the oven it is yummy.

Ingredients
6 eggs
1/2 cup picante sauce
2 cups of the cheese of your choice the original recipe called for 1 cup Monterrey Jack and 1 cup Cheddar, but I like 2 cups of either Mexican or Taco cheese blend
1 cup sour cream.

Directions
Heat oven to 375
Pour picante sauce over a grease 10 inch pie plate
Top with cheese and set aside.
In a blender or food processor, combine the eggs and sour cream and blend until smooth.
Pour over sauce and cheese and bake for 20-25 minutes or until a knife inserted in the middle comes out clean.

I made this today and there are no leftovers at all!
